Holland America’s Culinary Arts Programs at Sea

Culinary Arts Sailings.The Culinary Arts Center program is a groundbreaking program that integrates guests' love for fine food and wine with a unique and entertaining experience.

From wine-country cuisine to the re-invented wholesome fare of early American taverns to Southern-influenced prime seafood, Holland America Line opens its on-board kitchens to over 70 guest chefs from around the country throughout its 2010 cruise season. 2010 Holland America Exclusive Guest Chef/Culinary Arts Experts Series Sailings

Holland America Line launched its innovative culinary program in 2005 with the installation of state-of-the-art Culinary Arts Centers aboard each of its 13 premium cruise ships offering culinary demonstrations, tastings and hands-on cooking classes aboard every sailing. The line then took the concept further by providing guests on select Holland America Line cruises an opportunity to experience demonstrations and seminars conducted by guest culinary experts.

Holland America Line showcases its own culinary stars during each of more than 500 annual cruises where one can sample fine wines from around the world or learn to make a new gourmet dish in a hands-on cooking class taught by their own Master Chefs or Culinary Guests. Plus, with the release of the premium line's new cookbook, A Taste of Excellence, guests can learn preparation techniques for some of Holland America's most delectable dishes and lavish libations as part of the Culinary Arts Center experience.

A state-of-the-art "show kitchen at sea," the Culinary Arts Centers resemble the elaborate show kitchens used by celebrity chefs on television cooking programs. Each facility features a theater-style venue, with two large video screens to display overhead and close-up video views of food preparation, and a large cooking display counter where guests can learn from the masters. Culinary demonstrations also are filmed and aired on in-stateroom televisions. Holland America Line invested more than $13 million to create and install the Culinary Arts Center facilities on each of its ships as part of a $225 million Signature of Excellence initiative.

Culinary Demonstrations: One-hour complimentary culinary demonstrations are scheduled on all cruises. On-board chefs lead a variety of events. Demos take place a minimum of two times on a seven day cruise. Longer voyages add additional demos.

Culinary Cooking Classes: Private cooking classes with the ship’s chef are offered at a minimal charge of $29 per person. Maximum of 12 people per class. A minimum of two classes will be offered on a 7-day cruise. More on longer sailings. More sessions will be added as demand dictates.

Wine Enthusiasts: See, swirl, sniff, sip – the language of wine lovers is spoken at Holland America Line. Onboard activities for wine enthusiasts are a feature of every cruise, and include wine tastings hosted by our expert cellarmaster, who invites guests to sample a wide variety of premium wines.

Silversea Cruises Introduces New Cooking School
SilverSea six star cruisesThe curriculum for each of these cruises is carefully designed to celebrate the cultural flavor of the ship's itinerary.

Through its exclusive partnership with Relais & Châteaux, ultra-luxury Silversea Cruises is introducing L'École des Chefs, a new interactive cooking school that will be featured on 11 voyages in 2010.

The Relais & Châteaux L'École des Chefs program offers guests a special culinary curriculum and entertaining events hosted by Silversea executive chef David Bilsland. Bilsland's career includes several years as a chef instructor at the prestigious Le Cordon Bleu culinary school in London. He will present a program developed in collaboration with Jacques Thorel, the owner of L'Auberge Bretonne and a Grand Chef Relais & Châteaux.

The curriculum for each of these cruises is carefully designed to celebrate the cultural flavor of the ship's itinerary. Highlights include specialized workshops covering a range of topics from basic knife skills and kitchen terminology to sauces and baking; cooking demonstrations with wine pairings and interactive Q&A sessions; lively cooking competitions between Chef Bilsland and the ship's own culinary team; a "Lunch and Learn" event offering small groups of guests a chance to sample a meal of specially prepared dishes; and "Take It Home" recipes that will give guests an edge when entertaining at home.
